Ich habe mich auch als Interessent für den Spülmaschineneinsatz eingetragen und jetzt ist bei mir die Frage aufgekommen, ob Flaschen, die in der Spülmaschine gereinigt werden, danach auch hefefrei sind. Ich arbeite gerne mit Brett-Hefen und habe bislang die Flaschen anschließend immer desinfiziert, was auch gut geklappt hat.
Wenn ich die Flaschen dann bei 70°C in der Spülmaschine mittels Flascheneinsatz reinige, reicht das um auch Brett-Hefen zu killen?

Hallo Jens,
im Gegensatz zu "normalen" Hefen kann Brett Schleimkapseln bilden und sich so zu einem gewissen Grad vor äußeren Einflüssen schützen.
Wenn Du auf Nummer Sicher gehen willst, empfehle ich das volle Programm: gründliche mechanische Reinigung, Temperatur und chemische Keule.

I started working with some of the Wyeast Brett blends (the Old Ale and the Trappist (Orval)), and wasn't two happy with the prospect of buying all new equipment for just these two batches. So I wrote the following question to Wyeast:
"Is Brett really as tenacious and impossible to get rid of as I'm reading? Do I need an entirely new set of siphons, tubing, paddles (for oxygenating the wort) etc.? I'm prepared to make one fermenter the "Brett bucket". Will campden tablets, bleach, starsan, or boiling water be helpful at all? What about with a glass fermenter?"
This is what Jess Caudill, microbiologist and brewer at Wyeast, wrote back:
"No. It is as easy to kill as any Saccharomyces cerevisiae strain of yeast. No crazy chemical cocktails are necessary... just your normal alkaline cleaning and acid sanitization. It's up to you if you want different equipment for your wild brews."

Also 100°C Wasserdampf für kurze Zeit haben meinen Edelstahlbottich brettfrei bekommen. 70°C wären mir zu heikel, bei Brettanomyces reichen ja leider ein paar vitale Zellen und es ist vorbei.
Edit: Eine kleine Recherche ergab zumindestens für vegetative Zellen (also keine Sporen), dass eine Minute bei 70°C praktisch alles an Hefen tötet. Die Frage ist jetzt eben nur, wie stabil eventuelle Sporen sind.
